Grapes: 100% Sangiovese

Exposition – Altitude: South-West - 400 mt above the sea level

Soil: hilly neutral clay, rich in gravel and pebbles (Alberese and Galestro)

Vinification: Manual harvest in small crates. Soft pressing of grapes, the short contact on skins give a soft pink colour to the must. The resulting mass is cooled in a steel tank at a temperature around 0°C for approximately 20 days. After we decant the sediment-free portion and fermentation begins at a temperature of around 10°C. After the first alcoholic fermentation, the wine has the second fermentation in small pressurized steel tanks, specifically suited to production of Martinotti Method sparkling wines. The wine is  kept on lees for approximately three months before being filtered. The stop on lees in autoclave preserves the freshness and floral and fruity aromas typical of a sparkling wine, and imparts body and roundness.

Bouquet: In the glass, it appears pale pink color with coppery highlights. The bubble is fine, long, and persistent. At the nose it offers expressive and fresh aromas with notes of rose, raspberry, and wild strawberry. On the palate, it is lively and fresh, supported by a pulpy acidity.

Serving temperature : 6°/8°

Food pairing: Appetizers with delicate cured meats and fresh cheeses. Light fried meat or fish. Carpaccio and meat tartare. Seafood risotto, asparagus risotto
